Gingerbread Men Recipe!
I’m not sure where this recipe came from! But it works well
and the kids love it, just the right amount of Ginger!
12oz Plain Flour
1 teaspoon Bicarbonate of Soda
2.5 teaspoons of ground Ginger
4oz unsalted butter
6oz Light brown soft sugar
1 egg – beaten
4 tablespoons Golden Syrup
pre-heat the oven to 190 degrees C
sift the flour, bicarbonate of soda and ground ginger together in a mixing bowl
chop the butter into small pieces, and rub into dry mixture until the consistency of fine breadcrumbs, then add the sugar and mix together
mix the beaten egg and golden syrup together, and add to the mixture, mixing together to form a dough
Now the fun begins!
Roll out on a floured surface to about 3mm thick, then cut out what ever shapes you want. Put onto a lightly greased or lined baking sheet, decorate and cook for approximately 10 to 15 minutes depending on size of biscuit. I tend to check the colour and spread of the biscuit.
When they are cooked, leave on the baking sheet for a few minutes, then transfer to a cooling rack, and leave to cool completely.
Then eat!!!!!!

December 16th, 2007 at 1:19 pm
These are adorable!
I like the idea of using golden syrup instead of molasses – it’s easier to find.
December 16th, 2007 at 11:48 pm
The recipe is from Mary Berry’s Ultimate Cake book. Loads of other great child friendly recipes contained within. I’ve not had any disappointments yet [touchwood] It is nice to mix light brown sugar with dark soft brown sugar unrefined molasses sugar.
I stick smarties on with blobs of melted chocolate.
December 16th, 2007 at 11:57 pm
I can vouch for the recipe…they are fantastic!

December 20th, 2007 at 6:57 pm
what am I doing wrong? The mix looks like cake batter after the egg has been mixed. I can’t pick it up and roll it of anything, I’ve had to add about double the flour it get it to turn to dough
December 20th, 2007 at 8:44 pm
THE BEST! My 2 1/2 yr old daughter and I just finnished making a few dozen! They are perfect. She normally doesn’t like gingerbread and I find some overwhelming, she LOVES these and so do I. I substituted golden syrup for corn syrup and added some cinnamon to the recipie. Wonderful ~will be a staple part of our recipie book .
Thanks for sharing!

Lovely recipe! One little tip though is to chill the dough in the fridge for at least 30 mins before rolling out, otherwise you end up with a big runny mess! xxx

I have a fantastic gingerbread cake recipe:
8 oz dark brown sugar
6 oz margarine (soft)
6 oz golden syrup
6 oz treacle
15 oz tin evaporated milk
Put in ingredients into a saucepan and gently melt – do not boil. Use when slightly warm.
1 lb wholewheat or plain flour
3 teaspoons ground ginger
2 teaspoons baking powder
1/2 teaspoon bi-carb
Sieve these ingredients together in a bowl
1 egg well beaten.
Combine all ingredients mixing really well. Can add chopped stem ginger or 4 oz sultanas at this stage, but this is optional.
Base line a deep tin roughly 8″ x 10″ – 2.1/2 to 3″ depth. Thoroughly grease sides
Pour mixture into tin and cook for 55 minutes on 150C, Fan Oven. Might be higher in a normal oven. Cool in tin before cutting.

November 9th, 2008 at 11:40 pm
Just made these, theyre very good. I added extra ginger (by accident..!) and a teaspoon of cinnamon. I wanted them a bit chewier but left them in the oven a tad too long, oh dear.
I’d reccomend these to anybody as its an easy recipe!
November 11th, 2008 at 8:53 pm
this is the easiest recipe i have come across, with the least amount of ingredients, tho i would recommend maybe a little mixed spice or ground cinnamon to spice these bad boys up abit
December 7th, 2008 at 5:08 am
MMMM so Good i loved them.. and they were sooo easy to make and decorate! thanx alot for the recipe?
December 7th, 2008 at 2:06 pm

Excellent recipe… my son and I have had a wonderful afternoon decorating the men and angels for our christmas tree! They are also yummy we have had to try a few just to make sure.
December 12th, 2008 at 9:07 pm
The best gingerbread man recipe by far on the net. Simple and to the point, why do the rest have to be quite so complicated and yet they don’t have such a fantastic flavour?
A very big thank you for taking at least one stress away at this festive time.
December 16th, 2008 at 5:10 pm
These look so good! What temperature does the oven have to be? Ive never made gingerbread men before
December 16th, 2008 at 7:08 pm
Hi, I’m thinking about making some of these this week. Can anyone tell me how long they’ll last and how best to store them? I’m thinking about adding them to my mini hamper Xmas presents but don’t want to make them too early if they won’t last.
Thanks.

January 11th, 2009 at 4:15 pm
These are excellent. I doubled up on the ginger and added some cinnamon to make them really spicy (though I wouldn’t recommend this for giving them to kids). I found they only needed 10 minutes at 190! Really quick and easy to make.
January 12th, 2009 at 11:53 pm

January 25th, 2009 at 4:45 pm
hi, can anyone help me with a really silly question?!!
Can you bake these gingerbread men with the smartie in the dough?- wouldnt it just melt?, or should i push it in when soft and setting?. I m trying to make them without needing to stick smarties on top with icing etc. Any offers of advice would be great , thanks everyone .

how many does this make?
March 7th, 2010 at 10:04 pm
first time i ever made gingerbread men with my kids , for some reason i thought they would be difficult.. not at all made five large and ten small, have put the rest of the mixture in the freezer, dont… know if that will work but thought it would be a quick activity after school.. top tip keep butter in the freezer and grate into mixture , makes it rub in really quickly. thanks for the recipe…
May 19th, 2010 at 9:01 am
i made these last night as a test as i am having homemade gingerbread boys and girls as my wedding favours – used molasses instead of golden syrup and as i only had little cutters i baked for 8min – wow these are divine!! just the right amount of ginger and the that slightly chewy consistancy!! this is going to be my favour recipe thank you!!
