Gingerbread Men Recipe!
I’m not sure where this recipe came from! But it works well π and the kids love it, just the right amount of Ginger!
12oz Plain Flour
1 teaspoon Bicarbonate of Soda
2.5 teaspoons of ground Ginger
4oz unsalted butter
6oz Light brown soft sugar
1 egg – beaten
4 tablespoons Golden Syrup
pre-heat the oven to 190 degrees C
sift the flour, bicarbonate of soda and ground ginger together in a mixing bowl
chop the butter into small pieces, and rub into dry mixture until the consistency of fine breadcrumbs, then add the sugar and mix together
mix the beaten egg and golden syrup together, and add to the mixture, mixing together to form a dough
Now the fun begins!
Roll out on a floured surface to about 3mm thick, then cut out what ever shapes you want. Put onto a lightly greased or lined baking sheet, decorate and cook for approximately 10 to 15 minutes depending on size of biscuit. I tend to check the colour and spread of the biscuit.
When they are cooked, leave on the baking sheet for a few minutes, then transfer to a cooling rack, and leave to cool completely.
Then eat!!!!!!

I like the idea of using golden syrup instead of molasses – it’s easier to find.

The recipe is from Mary Berry’s Ultimate Cake book. Loads of other great child friendly recipes contained within. I’ve not had any disappointments yet [touchwood] It is nice to mix light brown sugar with dark soft brown sugar unrefined molasses sugar.
I stick smarties on with blobs of melted chocolate.

THE BEST! My 2 1/2 yr old daughter and I just finnished making a few dozen! They are perfect. She normally doesn’t like gingerbread and I find some overwhelming, she LOVES these and so do I. I substituted golden syrup for corn syrup and added some cinnamon to the recipie. Wonderful ~will be a staple part of our recipie book .

I have a fantastic gingerbread cake recipe:
8 oz dark brown sugar
6 oz margarine (soft)
6 oz golden syrup
6 oz treacle
15 oz tin evaporated milk
Put in ingredients into a saucepan and gently melt – do not boil. Use when slightly warm.
1 lb wholewheat or plain flour
3 teaspoons ground ginger
2 teaspoons baking powder
1/2 teaspoon bi-carb
Sieve these ingredients together in a bowl
1 egg well beaten.
Combine all ingredients mixing really well. Can add chopped stem ginger or 4 oz sultanas at this stage, but this is optional.
Base line a deep tin roughly 8″ x 10″ – 2.1/2 to 3″ depth. Thoroughly grease sides
Pour mixture into tin and cook for 55 minutes on 150C, Fan Oven. Might be higher in a normal oven. Cool in tin before cutting.

The best gingerbread man recipe by far on the net. Simple and to the point, why do the rest have to be quite so complicated and yet they don’t have such a fantastic flavour?

Hi, I’m thinking about making some of these this week. Can anyone tell me how long they’ll last and how best to store them? I’m thinking about adding them to my mini hamper Xmas presents but don’t want to make them too early if they won’t last.
Thanks.

first time i ever made gingerbread men with my kids , for some reason i thought they would be difficult.. not at all made five large and ten small, have put the rest of the mixture in the freezer, dont… know if that will work but thought it would be a quick activity after school.. top tip keep butter in the freezer and grate into mixture , makes it rub in really quickly. thanks for the recipe…
