stew, then pancake
yes, that was our tea tonight : )
this is towards the end of being cooked, before I put the dumplings on the top, hmmm, maybe not such a healthy tea tonight, but it was very yummy! When I make stew the whole day is used, unless I start the night before, and it makes you very hungry when all you can smell is meat and onions being slowly cooked together. All the veggies get added about 2 hours before you are ready to eat, except for the potatoes which are much quicker to cook. Tonight we had swede, carrots and leek, but you can throw anything in, whatever you have to hand really.
So that was the stew, and then onto to the Pancakes!
I use a recipe that is by Hugh Fearnley-Whittingstall, but I guess it is really just a basic batter mix, but this one works for me, and I had problems before!
It is;
200g plain flour
pinch of salt
2 large eggs
and up to 500ml of milk
and to fry use a little sunflower oil, and wipe out the excess as you cook.
I have a proper Pancake Pan, which is fab, because it is so shallow, so it is really easy to sort them out, and flip, I also use it for fried eggs for the same reason!
This recipe makes between 12 and 14 in my pan, so enough for us piggies, especially after we have eaten a big bowl of stew!
I have done a bit more today on my bags, I hope to have 2 of them in the shop tomorrow evening, have to see how tomorrow goes : )

The pancakes look lovely and light. I’ll have to try these. My family tend to have a bit of competition as to who can eat the most…… definitely little ‘piggies’. They were both disappointed that they hadn’t made them at school to they were very welcome – some with lemon and sugar and some with syrup.
They’ll have to work off the excess calories in PE today!
